5 September 2016 Harvest Composition: 23.1 Brix, 3.41 pH, 7.22 TA
Vinification: 15% whole cluster fermentation, 85% crushed and destemmed, fermentation in 1 ton vats for 8 days. Aged 20 months in a variety of 3rd to 8th fill French and Hungarian Oak barrels (225 L)
Our 2016 Zinfandel bursts with an abundance of fruit highlighted by agave and black pepper. With the alcohol much lower than your typical California Zinfandel, the tannins are balanced by the grapes’ natural acidity providing luscious mouthfeel.
