2018 Viva Rosé (Wildlife Conservation Series)
66% Tempranillo, 24% Grenache, 10% Zinfandel
100% Toca Madera Vineyard, Madera California

Vinification: Stainless steel fermented 60%, barrel fermented 40% in
8th to 10th fill American Oak barrels
Aging: 7 months in 8th to 10th fill American Oak barrels, Sur Lie, stirred once a month.
Upon hand harvesting the Tempranillo, Grenache, and Zinfandel grapes were crushed and destemmed directly into our press. The grapes were then pressed to the pink hue in the bottle now. Co-Fermentation followed and lasted 14 days to reach dryness. Upon completion of fermentation the wine was racked back to barrels for aging. No malolactic fermentation was done to retain acidity and freshness.
