Vinification: Fermented dry on the skins in ½ tons vats (7 day skin contact).

A wine that pays homage to the oldest white winemaking style. Fermented on the skins to dryness and pressed to barrel for 6 months of aging, this wine has distinct characteristics of Meyer lemon, peach, and mustard seed.

Sulfite free, unfined, and unfiltered.
