Pairing #1
2021 Unico – Natural wine, 100% Moscato Giallo
The most unique wine in the Madera AVA. Fermented dry on the skins for 10 days, then pressed directly to barrel where barrel aging took place for 7 months. The Unico is Sulfite free, vegan friendly and one way to show most true expression of Moscato Giallo from our Estate Vineyard.
Mexican Shrimp Cocktail
Minced shrimp marinated in a citrus juice blend with tomato, cilantro, onion, serrano, and cucumber in a tomato clam broth
Pairing #2
MosMosa – Special for Brunch
Toca Madera Moscato, mixed with fresh local squeezed tangerine juice
Breakfast Enchiladas
Eggs, potatoes, and chorizo, wrapped in a tortilla and served with a tomatillo jalapeno chile sauce, queso Cotija on top.
Pairing #3
2021 Wildlife Conservation Moscato
Fermented for 83 days at below freezing temperatures, our Moscato displays flavors and aromas almost identical to the hand-picked Moscato grapes. The extended cold fermentation captures the honey dew melon, pear, and floral aromas of Moscato Giallo and gives the yeast the ability to stop the fermentation early leaving behind a nice balance of residual sugar complimented by the acidity of Toca Madera Muscat.
Mixed Charcuterie
Various meats, cheese and olives
Pairing #4
2017 Syrah/Grenache/Mourvedre/Viognier – 93 Points Wine Enthusiast
This light-colored but complex and savory-tasting blend of Mourvèdre, Grenache, Syrah and Viognier downplays fruitiness and offers layers of leather, caramel, mushroom and beef on a medium body and lightly tannic texture. Its earthy, mature aromas and good balance make it a great change of pace. Jim Gordon Wine Enthusiast Magazine
Huevos ShakShukos
Local Madera eggs steamed in a hearty sauce of Roma tomatoes, 3 different chiles, onion, garlic, and oregano. Topped with cilantro and queso fresco.
Pairing #5
